Tantangan KBB # 30 Rosemary-Cheese Spritz Cookies


After along awaiting, finally email notification arrived. This time challenge is to bake  cookies using a cookie press. I don't have cookie press at all. Tried to get a bargain through trademe but no luck. Luckily, One day I was at Westfield Riccarton Mall and went pass STEVENS and guess what?? I've got the bargain. It's 50% off from the original price --- woot woot ...

Back to Challenge # 30 - Rosemary-Cheese Spritz Cookies, after I read the recipe I knew it's going to be a challenging time in the kitchen, since I never use the cookie press. But hey... there's always first time for everything rite

Here's The recipe :

Rosemary-Cheese
Spritz Cookies From Food Network Kitchens


(for this challenge I only use half of the recipe)

Ingredients

1 cup (2 sticks) unsalted butter


1 teaspoon finely grated lemon zest


1 large egg yolk


6 tablespoons heavy cream


1 3/4 cups all-purpose flour


3/4 cup finely grated Pecorino cheese === I used Edam cheese


1/2 cup finely grated Parmesan cheese


1 tablespoon sugar


2 teaspoons minced fresh rosemary leaves


1 teaspoons fine salt


Pinch freshly ground nutmeg


Special Equipment: Cookie Press


Directions


Bring all ingredients to room temperature.


Beat the butter and lemon zest with an electric mixer at medium speed until
smooth, about 30 seconds. Slowly beat in the egg yolk and cream.

Whisk the flour, pecorino, 1/4 cup of the Parmesan, sugar, rosemary, salt, and
nutmeg together in a bowl. Gradually add the flour mixture into the butter mixture while mixing slowly. Scrape down the sides of the bowl, then beat on medium speed to make a slightly sticky dough.

Fill the cookie press with the dough. Assemble the press with the desired disk
shape (see cook's note), and press cookies onto ungreased baking sheets. Leave about one inch between cookies. Sprinkle with the remaining 1/4 cup Parmesan and refrigerate cookies for 20 minutes.

Preheat oven to 325 degrees F.


Bake cookies, rotating pan halfway through, until golden, the cheese browns a
bit, and the cookies smell nutty, about 20 to 25 minutes. Briefly cool the cookies on the baking sheets, then transfer to racks to cool. Serve or store in a tightly sealed container for up to 1 month.

Cook's Notes: These freeze beautifully. Press the cookies out into desired

shapes on cookie sheets and freeze. Transfer frozen cookies to a plastic bag, seal, and keep frozen for up to 1 month. When ready to bake, lay out frozen cookies on cookie trays and bake from frozen for 25 minutes.

Some disk shapes work better than others. Since this is savory cookie, we liked
the cutters that result in a cracker shape cookie.

First thing to do is mix all the ingredients based on the recipe. It's not too difficult to do.

Beat butter & lemon zest. Then add egg yolk and cream.

Whisk the flour, edam cheese, permesan, sugar, rosemary, salt and nutmeg together in a bowl. Gradually add the flour mixture into the butter mixture while mixing slowly. Scrape down the sides of the bowl, then beat on medium speed to make a slightly sticky dough.























The challenging time begin, I fill the cookie press with the dough. I choose snowflakes disc for this cookie

Feel confidence at first, but then dough not sticky enough to stay on baking tray. It doesn't shape the snowflakes at all

I tried to add more flour into the dough but it doesn't work. Maybe because it was my first time using the cookie press so I wasn't familiar with it.

And the show must go on, I keep continue trying to make a cookie but only 2 survived. Thinking to re-bake again at some stage but then, time flies and now nearly reach the deadline.

Cheesy Choux Pastry


Cheesy Choux Pastry

The recipe is in Bahasa Indonesia, here's the recipe in english:

The ingredients :

100 gr butter
225 cc water
1/4 sdt salt
3 Eggs
125 gr all purpose flour
1 sdt baking powder
25 gr Permesan Cheese
25 gr Cheddar cheese,grated


Directions :

- Heat oven on 180 degree celcius. Prepare the baking tray
- Put butter & water in a saucepan until boiling & butter is melted. Pour flour, stir until mixed, put aside
- Pour permesan cheese & baking powder into flour-butter-water mixture, stir let it cool.
- Add egg one at a time. Stir until mixed
- Put the mixture into piping bag use star tip & make small round shape. sprinkle cheddar cheese over
- Bake the pastry until turn golden brown

Dan hari ini nyoba bikin dan hasilnya agak sedikit bantat. entah kenapa ya? ada yang bisa bantu cari tahu kenapa agak bantat?

Tapi soal rasa sih kejunya udah berasa banget.

Blueberry Cheesecake

Akhirnya berhasil bikin Blueberry cheesecake. Salah satu dessert favorite. Waktu di jakarta paling suka makan blueberry cheesecakenya dari Cheesecake Factory.
Resep blueberry cheesecake didapat dari sini. Sebetulnya e
ngga terlalu susah buat bikin cheesecake ini. Yang sempat terjadi dengan cheesecake buatan saya yang pertama ini pinggirannya sempat agak over-burnt. Karena kelupaan ngebuka pinggiran dari springform tin



Kenapa mesti dilepas pinggirannya. Pada prinsipnya, walopun cake sudah kita keluarkan dari oven, tapi panasnya itu masih nempel di loyangnya.

Oleh karena itu, agar pinggirannya tidak terbakar seperti ini, begitu kita keluarkan cake dari oven, dan siap didinginkan di rack, jangan lupa lepas pinggirannya

Walopun pinggirannya agak gosong, tapi pas dicoba rasanya tetep ok ...

Udah engga sabar pengen segera makan cheesecakenya ....

Supposed to be a Homemade Wholemeal Bread

Sometimes things goes wrong in cooking / baking

Last night, i tried to bake a homemade wholemeal bread. This was my first attempt in baking a bread. Feels confidence that i know what to do then i gave it a go.

Turned out, i over kneading and the result the bread is cracked...

Today, I've found the source to learn how to knead the bread dough here. I will learn how to knead from them then :)

Although this time, i made 'cracked' wholemeal bread but hey... it won't stop me for baking a homemade bread !! :)

Sus Vla Buah

Setelah bikin Sus Merdeka yang ini. Kepikiran juga buat bikin Sus dengan Vla buah. karena pada dasarnya resep kulit dan vla sama jadi ya sekalian aja :)

Tambahan buat bikin Vla buah ini adalah buah2an segar dan siraman cairan agar-agar




Cara membuat cairan agar2

1 sdt agar-agar putih
1 sdt gula pasir
1/2 gelas air

Cara membuat :
Rebus agar-agar, gula dan air sampai mendidih
dinginkan

Tips : membuat cairan agar-agar ini sebaiknya setelah seluruh kulit sus diisi vla dan buah, kalo dibuat sebelumnya bisa-bisa cairan agar-agarnya mengeras (pengalaman tadi soalnya *.* )

Penyelesaian :

Potong adonan kulit sus menjadi 2 bagian, bagian bawah harus lebih besar daripada bagian atas.
Bagian atas kulit sus, disimpan terbalik di bagian bawah kulit (untuk jadi mangkoknya).
Isi kulit sus dengan vla & buah
Lakukan sampai semua kulit sus terisi vla & buah

Siram dengan cairan agar-agar masing-masing sus vla buah-nya

Diamkan sejenak, Sus vla buah siap disantap

Sus Merdeka

Awal tertarik mau bikin Sus Merdeka ini, gara2 ada temen di sini - mbak Susy Limas- yang bikin kue sus dengan rasa mirip banget ama Sus Merdeka. Beberapa temen sih udah nyoba bikin dan berhasil. Nah ceritanya, saya dikasih contekan resep tapi tadi engga nemu sama sekali, padahal udah niat banget mau bikin ini kue sus.

Akhirnya Googling nemu beberapa resep
di sini dan sini juga - kalo yang site ke 2 sih lebih ke arah sus vla buah.

Tapi pada dasarnya sih cara membuat sus vla biasa dan sus vla buah sama aja. Jadi ceritanya tadi bikin sus vla buah juga :)

Tahap2annya mudah banget kok diikuti (sesuai dengan link yang diatas) cuma ada beberapa bahan yang disesuaikan dengan bahan yang ada di sini :

 Untuk Adonan kulit Sus :


250 ml air
1/2 sdt garam
125 gr Margarin

150 gr all purpose flour - (karena engga ada tepung terigu cakra)

1/2 sdt baking powder - (buat bikin adonan mengembang)
4 butir telur


Cara Membuat :
Rebus air, garam dan margarin sampai mendidih
Masukkan tepung terigu, sampi kalis. Angkat dari api. Dinginkan.


Tambahkan telur satu persatu sambil dikocok dengan menggunakan mixer.
Semprotkan adonan di loyang yang
telah diolesi margarin (kalo saya menggunakan baking paper & karena engga ada semprotan kue, adonan kulitnya saya bentuk dengan menggunakan sendok saja)
Jangan lupa perhatikan jarak
antara satu adonan kulit dengan adonan kulit lainnya. karena setelah dipanggang adonan kulit ini bisa mengembang antara 2-3kalinya.
Oven 25 Menit dengan api bawah
200 C (untuk adonan versi saya waktu memanggang antara 30-35 menit)













Bahan Vla (buat dalam 2 resep)
200 ml susu cair
75 gr gula pasir
25 gr tepung maizena
1/8 sdt garam
1 kuning telur
2 sdm vanilla essence

Cara membuat :
Rebus susu,
gula pasir, garam dan tepung maizena sambil diaduk sampai meletup2. (kenapa mesti diaduk, untuk menghindari gosong di bagian bawahnya karena ada tepung maizena yang bikin cairan ini mengental)
Ambil sedikit campuran susu aduk dengan kuning telur, kemudian masu
kkan campuran susu & kuning telur ke panci, aduk sampai meletup2, angkat dinginkan.
Setelah dingin, masukkan vanilla aduk rata.
Masukkan adonan  vla ke dalam plastik segitiga (saya engga ada pl
astik segitiga jadi adonan vla disendokin aja)

Penyelesaian :

Gunting adon
an kulit sus menjadi 2 bagian sama besar
Masukkan adonan vla ke bagian bawah kulit sus dan tutup dengan kulit sus bagian atas.
Sus Merdeka siap disantap

Blueberry Banana Muffins

Pas ngeliat pisang udah matang banget di meja, terbentik niatan buat bikin muffins. Nengok di kulkas, ada persedian blueberry & yoghurt rasa blueberry pula. Hunting di internet ketemu deh ama resepnya kang Jamie Oliver terus nengok ke cupboard, semua bahan2 ada tersedia...

berkutat selama kurang lebih 15 menit akhirnya adonan jadi & kurang dari 30 menit muffins-nya jadi deh... bikin 2 kali adonan buat dibagi ama temen2 di kantor. dan kata mereka muffinsnya enak dan yang pasti moist...
